This beautiful gut healthy pudding is a delight for your taste buds. Start your day with a boost to your immune system, help restore balance to the gut and improve your digestion. These tiny seeds are high in fibre as well as omega 3. Cherries are packed with antioxidants and anti inflammatory compounds to help calm inflammation and muscle pain. This pudding is made with coconut milk kefir that contains probiotic cultures to help maintain your good bacteria and support gut health.

Chia pudding with cherry

Ingredients

Serves 1

  • 1-2 tbsp chia seeds

  • 1-2 tbsp maple syrup

  • 1 tsp vanilla extract

  • 4-5 tbsp coconut milk kefir

  • 1-2 tbsp bovine or marine collagen powder


Mix the ingredients together and stir well. Leave for 5 minutes and stir again, making sure you don’t have clumps of seeds stuck together. This can be made the night before, and stored in the fridge in a sealed container for 3-4 days.

To make the purée, simply blitz together some frozen red berries with a little maple syrup. (I used frozen cherry, strawberries and blueberries). Taste and adjust with more berries or to suit your taste.

For texture I added my homemade gluten free granola and topped it with some fresh cherries
