Eggs on toast with parma ham

Getting enough protein in our diet is important for our body’s health. Add in some gut healthy live yoghurt and this tasty breakfast will become a favourite! Watercress is a powerhouse vegetable loaded with anti inflammatory properties. Adding some hemp seed to your breakfast is a great source of magnesium and aids good digestion.

Eggs on toast with Parma ham


Ingredients

Serves 1

  • 2 eggs, fried in a little olive oil

  • 2 slices GF toast

  • 1-2 tbsp gut healthy coconut milk yogurt

  • 4-5 drops hot pepper sauce

  • 2 slices parma ham, rolled into a rose shape

  • Watercress, hemp seed and black pepper to serve


To assemble, mix the hot pepper sauce with the coconut milk yoghurt and spread this into the toast. Top with the eggs and nestle a parma ham rose in the middle. Serve with the watercress, hemp seed and black pepper.
