Tomato and basil salad

One of the main reasons that tomato and basil are a nice pairing is that they taste and smell so good together. This colourful salad is a delicious side dish that can compliment many dishes and incredibly quick and easy to prepare.

Tomatoes and basil both have strong anti inflammatory properties and can help to ease inflammation

Ingredients

Serves 4 as a side dish

  • 500g of heritage or cherry tomatoes, quartered (try to include different coloured ones)

  • pinch of sea salt

  • 1 garlic clove, grated

  • 2 tbsp balsamic vinegar

  • 4 tbsp extra virgin olive oil

  • sea salt and black pepper to season

  • handful of basil leaves


Make sure the tomatoes are at room temperature.

Add the chopped tomatoes to a bowl as sprinkle over with a pinch or two of sea salt.

Mix the garlic, balsamic vinegar, oil and seasoning in a bowl.

Top the tomatoes with basil leaves before serving and pour over the dressing. Leave to infuse for 10-15 minutes at room temperature.
