Fennel and crab soup

If you love crab then you need to try this recipe. It’s perfect for those rainy days when you need a warm pick-me-up. The crab is rich in protein and is packed with essential nutrients like zinc, B12 and selenium.

Ingredients

serves 1-2

  • 1 tbsp olive oil

  • 1 onion, finely chopped

  • 1/2 fennel, finely chopped

  • 2 small potatoes, peeled and cubed

  • 1 dressed crab or 50/50 crab meat

  • 250ml chicken bone broth (add more if you want a thinner soup)

  • 1 tsp cayenne pepper


Sauté the onion, fennel and potatoes with the olive oil on a medium heat.

Add the bone broth and simmer until the potatoes are cooked.

Add the crab meat and cayenne pepper.

Heat through and test it. (add some sea salt if needed).

Serve with a crab claw (if included in the dressed crab and a sprig or 2 of fennel fern
