Spicy crab noodles

This speedy spicy crab noodle recipe will become a weekly midweek favourite. A delicious rice noodle dish that is better than any takeaway!

Ingredients

Serves 2

Sambal paste

  • 1/2 red chilli (more or less depending on your spice preference

  • 2 tbsp tomato paste

  • 1 tsp ground turmeric

  • thumbnail size of fresh ginger, peeled

  • 1 tbsp Maple syrup

  • 1 lemongrass stick, woody bits removed

  • 1 lime, juice and zest

  • 1 tbsp black peppercorns

Crab noodles

  • 190g coconut cream

  • 100g fresh 50-50 crab meat

  • 200g rice noodles

  • extra lime to serve


Blitz together the sambal ingredients. In a large pan or wok, dry fry the sambal paste on a medium heat for 2-3 minutes. Stir continuously so the the mix doesn’t separate or burn.

Add the coconut cream, mix and cook for a further 2 minutes

Remove from the heat.

Cook the rice noodles as per the packet instructions, drain and refresh in cold water. Add them to the sauce. Heat and mix together on a low heat.

Remove from the heat and add the crab meat. Mix well.

Serve with an extra squeeze of lime juice.
