Savoury Mince

For a speedy midweek meal, savoury mince is a family favourite and makes a change to having bolognaise. Savoury mince is a great way to pack in those extra veggies and fibre to help gut health and digestion.

Ingredients

  • 1 large onion, finely chopped

  • 2 cloves garlic, finely chopped or grated

  • 2 sticks of celery, cut into thin slices

  • 2 carrots, no need to peel, cut into small chunks

  • 1-2 tbsp olive oil

  • sea salt and black pepper to season

  • 1 tsp dried orgeno

  • 1 tsp paprika

  • 250ml bone broth

  • 2 large handfuls of peas or petite pots


Add the onion, garlic, celery and carrots to a large pan and drizzle over the olive oil and season with sea salt, black pepper, oregano and paprika. Cook on a medium heat for about 5 minutes until softened. Stir occasionally.

Add the mince to the saucepan and cook until all the meat has turned brown and fully cooked.

Add in the bone broth and leave to simmer on a low heat for 10 minutes.

Add in the peas and leave to simmer for a further 2-3 minutes.

Serve with basmati rice and steamed tenderstem broccoli.
