Sardine salad

This is a great salad that’s quick to prepare and a great on the go lunch option or one to take to work. Sardines are a fantastic source of omega 3, which can help reduce inflammation.

Having a salad that is rich in protein, means it can help keep you full until your next meal.

Ingredients

serves 1

  • handful of watercress

  • 1 carrot, no need to peel, grated

  • handful of shredded lettuce

  • 1-2 spring onion, finely chopped

  • 1/2 cucumber, cubed

  • 1 tin (I used a 120g tin) sardines in olive oil - save the oil for the salad dressing

  • 2 slices of gherkins

  • handful of tomatoes, cubed

  • pinch of sea salt

  • 1 tsp dried oregano


Start by adding each ingredient to your dish.

Season the tomatoes with the sea salt and oregano

Pour over the oil from your tinned fish over the salad
