Chocolate overnight oats

These chocolatey overnight oats offer a range of health benefits due to their rich protein and fibre content. The addition of coconut milk kefir and the beneficial good bacteria this contains, makes this a great probiotic breakfast to support gut health.

Cacao is rich in flavonol, which can help with significant in mental focus and attention span. This is an easy make ahead breakfast, that takes 5 minutes to assemble. Store overnight in a sealed jam jar or sealed glass container and you have a high protein breakfast waiting for you in the morning. Top with berries and tuck in.


Ingredients

serves 2

  • 2 tbsp cacao powder

  • 2 tbsp maple syrup

  • 1 tsp vanilla extract

  • pinch of sea salt

  • 2 tbsp bovine or marine collagen powder

  • 240g coconut milk kefir (choose one that contains probiotic bacteria)

  • 90g gluten free oats


Mix together all the ingredients except the oats, until well combined.

Add the oats and mix well.

Add to an airtight glass container and leave overnight in the fridge

In the morning, top with fresh strawberries
